Oatmeal Pie

Makes 6 servings

1 single 9" pie crust
2 large eggs, lightly beaten
2/3c unsalted butter, melted
1/2 c granulated sugar
1/2 cup light corn syrup
1 1/2 tsp vanilla extract
3/4 c old fashioned oats

Preheat oven to 350°F. Mix all ingredients together and pour into prepared
pie shell (no need to pre-bake the pie shell). Bake until filling is set in
the center, about 45 minutes. Cool completely before serving.*
