Subject: Spinach Balls

1 pkg Stove top stuffing mix (6 oz)
1 c hot water
2/3 c liquid Italian dressing
2 pkg 10 frozen chopped spinach--thawed, drained and patted dry
3 eggs
1 c parmesan cheese
1 c chopped mushrooms
1 small chopped onion
Ranch dressing for dipping

Mix stuffing mix, hot water and dressing in large bowl

Stir in remaining ingredients. Shape into 1" or larger balls. Please on greased cookie sheet
Bake at 400º for 12-15 mins until light golden sheen appears. Makes about 50 balls.
