Subject: Maple Oat Bread

Maple Oat Bread

1 cup old fashioned oats
1 cup boiling water
1 package active dry yeast
1/3 cup warm water
½ cup maple syrup
2 teaspoons canola oil
1/½ teaspoons salt
3 ½ to 4 cups all purpose flour
Topping
1 egg white
2 tablespoons old fashioned oats

In a blender coarsely chop oats. Add to 1 cup of boiling water and let soak until mixture is lukewarm.
Dissolve yeast in 1/3 cup lukewarm water, add syrup, oil, salt, oat mixture and 2 cups flour. Beat until smooth. Add enough remaining flour to make a soft dough. Knead until smooth. Put in warmed oiled bowl, oil the top of the dough and let rise until double. Pounch down dough. Shape into round loaf, place on parchment paper lined round baking dish. Cover and let rise until doubled. Brush with egg whites and sprinkle with oats. Bake 350º until golden brown about 35 min.
