Cheese Straws

1 lb. extra sharp cheese, grated
2 sticks butter, softened
2 and 3/4 c.flour (2 c. plain + 3/4 c. self-rising), sifted together
Dash of cayenne pepper
3 Tbsp. cold water

Mix cheese, butter, and pepper by hand. Add flour and water alternately. Place in cookie press and make long strips on a large cookie sheet. Cut in lengths of 2 inches or desired length. Dough may be made into rosettes or other design. Cook in slow oven so will be crisp (about 1 hour at 275º or until golden brown. Do not cook too brown. Remove from cookie sheet after cooling a little. Store in tin cans or may freeze.

Yield: 125 to 130 cheese straws.
