Sweet White Potato Pie
2 (9-inch) unbaked pie crusts 5 eggs, separated 1 stick butter, softened 2 cups granulated sugar 2 cups cooked, mashed and
cooled white potatoes 2 1 /4 cups milk 1 /2 cup brandy 1 teaspoon vanilla extract 1 /2 teaspoon nutmeg
Arrange a pie crust in each of 2 (9-inch) pie plates; crimp edges.
In a large bowl, beat egg whites until stiff; set aside.
In a small bowl, beat egg yolks until golden in color.
In a separate large bowl, beat butter and sugar until smooth; add beaten egg yolks and mashed potatoes. Stir in milk, brandy, vanilla and nutmeg. The mixture will be a little thin. Fold in egg whites until fairly well combined. Divide mixture between pie crusts. Bake in a 350º oven for 1 hour. As the pies bake the egg whites float to the surface and produce an attractive crusty appearance.
