Cheese Brown Rice Casserole
3 cups of cooked brown rice
2-1/2 cups milk
2-1/2 cup shredded sharp cheddar cheese
2 eggs, beaten
2 teaspoons olive oil
1 cup chopped fresh parsley (Italian flat leaf parsley has the most flavor.)
6 green onions, finely chopped
1 teaspoon Worcestershire sauce
1 teaspoon yellow mustard
1/8 to 1/4 teaspoon Tabasco
1/2 teaspoon salt (or more to taste)
Cook brown rice according to package directions and let cool. Measure the 3 cups and place in a mixing bowl. Set aside 1/2 cup of the cheese. Combine all remaining ingredients with the rice and mix well. Place in a greased baking dish. Sprinkle remaining cheese on top. Bake at 350º for 45 minutes. 6 to 8 servings.
