Subject: How to cook Prime Rib Roast

Prime rib is easy. Let stand at room temp for 1 hour. Tie it with kitchen twine at both ends and around horz. to keep it solid while baking.
Sear the roast on all sides in hot pan until brown and some of the fat is rendered out of the roast. Set roast on a rack in a shallow pan and bake at 250º unitl center of roast reaches 130º. Let stand 20 -30 minutes to allow juices to redistibute themselves evenly through roast. Prime rib will be very pink in the center so don't try to get it all brown.

I age my prime rib up to two week in the fridge (34º) covered or up to 5 days uncovered. Aged beef costs a fortune and it is so easy to do. If it has been stored at 34º for up to 2 weeks it is prime aged beef. The old smell turns into the excellent flavor of a 5 star $100 restaraunt entree.
