I myself go for a some titles that eventually become big mainstream names (Love Hina, Bebop, trigun) yet others I loathe with a passion (Tenchi, DBZ, Gundam). And IMO, the best in mainstream nowadays are titles which don't follow a generic formula like [ahem*cough*sailormoon*cough], so usually there's nothing that comes close to it. Eventually you'll get plenty of emulators, like how Infinite Ryvius, Dual!, etc all seem to be copying Evangelion in some form or other.

Can't think of anything remotely close to Bebop. unless you want to go back in time, then look for some Monkey Punch aka Lupin III.

But just get into anything that seems to interest you. If it makes it cheaper, look for the manga version first (Some comic stores allow browsing, and I think some public libraries actually have copies. Serious! I know Portland does, anyway) before investing in video or DVD releases.
