Subject: BLUEBERRY CAKE

1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs,separated
1/2 cup shortening
1 cup sugar
1/3 cup milk
1 teaspoon vanilla
1 1/2 cups blueberries,washed,drained and dried

Sift dry ingredients together and set aside.

Beat egg whites until stiff,set aside.

Cream shortening with sugar thoroughly,add well beaten egg yolks.Add
dry
ingredients alternately with milk,beginning and ending with flour
mixture.
Reserve a teaspoon or two of flour to sprinkle on berries before adding
the
berries to the batter.

Fold in egg whites and vanilla.Add floured berries.Pour in a greased
and
floured 8 inch cake pan.Sprinkle a tablespoon of sugar over the top of
the
batter.

Bake at 350 degrees for 40 minutes.
