Subject: Massachusetts Mud Cake

Cake Batter:
2 cups white sugar
1 cup vegetable shortening
4 eggs
1-1/2 cups all-purpose flour
1/4 teaspoon salt
1/3 cup unsweetened cocoa
1 teaspoon vanilla
1 cup chopped nuts,optional
1 (10.5-ounce) small package miniature marshmallows
Chocolate Icing:
1 (16-ounce) box confectioners'sugar
1/3 cup unsweetened cocoa
8 tablespoons (1 stick) margarine,melted
1/2 cup evaporated milk
1 teaspoon vanilla

To make batter:In a large bowl with an electric mixer on high speed,cream
sugar and shortening,scraping side of bowl.Add eggs 1 at a time and beat
well after each addition.

In another bowl,mix flour,salt and cocoa together.Add dry ingredients to
creamed mixture along with vanilla and beat well.Add nuts, if using.Batter
will be very stiff.

Bake in a 9-by-13-inch pan at 300 degrees 30 to 40 minutes. Remove from oven
and immediately distribute marshmallows over top of cake.

To make icing:Sift sugar and cocoa together.Pour in melted margarine.Add
milk and vanilla,mixing well.Pour warm icing over warm cake and
marshmallows.Makes 15 servings.
