Subject: Red Pepper and Bean Cakes with Lemon Mayonnaise

3/4 cup fresh green beans,trimmed and chopped
1/4 cup peanut or vegetable oil
1 red bell pepper,diced
4 garlic cloves,crushed
2 teaspoons mild chile powder
1 can (15 ounces) red kidney beans,drained and rinsed
3/4 cup fresh bread crumbs
1 egg yolk
Salt, freshly ground black pepper
Flour as needed
Oil to coat a frying pan
Lemon Mayonnaise (see accompanying recipe)

Blanch the green beans:Plunge green beans in lightly salted rap idly
boiling water until softened,about 2 minutes.Rinse with cold water
and set aside.

Saute the vegetables:Heat oil in frying pan and saute the red pep
per,garlic and chile powder.Cool.

Make the bean mixture:Transfer sauteed vegetables,kidney beans,
bread crumbs and egg yolk to blender or food processor. Process
briefly until the ingredients are coarsely chopped.Add drained green
beans;season to taste with salt and pepper,and process briefly
until ingredients are combined.

Shape the cakes:Turn the mixture into a bowl,then divide into 8
portions.Using lightly floured hands,shape the portions into small
cakes.

Saute the bean cakes:Heat oil for frying in large pan and fry the
cakes about 3 minutes on each side until crisp and golden.

Presentation:Serve with lemon mayonnaise.
