Subject: Popcorn balls

2 cups sugar
1 cup water
1 cup light corn syrup or honey
3 tablespoons butter,plus more for buttering your hands
1 teaspoon vanilla extract or maple extract
8 cups salted popcorn

In a large heavy saucepan over high heat,stir together sugar, water,
corn syrup or honey and butter.Cook until mixture measures 260 degrees
on a candy thermometer(soft-crack stage).Remove from heat and stir in
vanilla or maple extract.

Place popcorn in a large,lightly greased mixing bowl.Pour syrup over
popcorn and stir with a spoon to coat thoroughly.Grease your hands
with butter.Working quickly,shape popcorn mixture into firm balls,
being very careful not to burn your hands on the hot syrup. Store any
leftovers airtight.
