Subject: ACAPULCO CHEESE SAUCE

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon paprika
3/4 cup milk
1/4 cup dry white wine
1 cup shredded Monterey Jack cheese or pepper jack cheese

In skillet,melt butter over low heat.Blend in flour,salt and
paprika.
Cook over low heat,stirring until smooth and bubbly.Remove from heat.
Gradually stir in milk and wine.Return to heat.Bring to a boil,
stirring constantly.Boil,stirring constantly,for 1 minute. Stir in
cheese.Cook,stirring constantly,over low heat until cheese melts
Cover.Keep warm until ready to serve.
