Subject: BAKED ALFREDO MACARONI

2 cups elbow macaroni
3/4 cup pasta cooking water
1 tablespoon olive oil
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped onion
1 bottle(16 ounces) sun-dried tomato Alfredo sauce
3/4 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon dried Italian herbs
1/4 cup chopped parsley
1/2 cup fresh bread crumbs
1 tablespoon butter,melted
2 tablespoons grated parmesan cheese

To prepare pasta:Bring large pot of water to a boil.Add macaroni.
Cook
according to package directions.Reserve 3/4 cup cooking water.Drain
pasta.Pour pasta back into pan.

To cook vegetables:Heat olive oil in 9-inch skillet over medium heat.
Saute bell peppers and onions for 5 minutes,or until softened.

To assemble:To macaroni,add sauteed vegetables,Alfredo sauce,
pepper,
salt,Italian herbs and parsley.Add enough pasta cooking water to
loosen mixture,making it very moist.

To bake:Preheat oven to 350 degrees.Transfer macaroni mixture to 9-
by
13-inch baking dish.Combine bread crumbs,melted butter and parmesan
cheese.Sprinkle over top.Bake for 25 minutes,or just until topping
begins to turn golden.Let sit for 5 minutes before serving.
