Subject: Baked Doughnuts

1/2 cup warm water
3 packages active dry yeast
1 teaspoon sugar
2 1/4 cups milk -- scalded
1/2 cup shortening
1 1/4 cups sugar
1 1/2 teaspoons salt
3 eggs -- beaten
3/4 teaspoon vanilla
1/2 teaspoon mace
1 1/2 teaspoons nutmeg
3 cups flour
4 cups flour -- additional

Combine warm water,yeast and sugar until dissolved.Set aside.

Combine milk,shortening,sugar and salt.Cool to lukewarm.

Add eggs,vanilla,mace and nutmeg and combine with yeast mixture.


Beat in 3 cups flour with electric mixer.Let rest 10 minutes.

Add 4 additional cups of flour,kneading until smooth.

Place in greased bowl and grease top.Cover and let rise until doubled,
about
1 hour.

Turn out onto floured board,roll to 1/2-inch thickness and cut with
doughnut
cutter.

Lift carefully onto greased baking sheet with spatula.

Brush tops with oil and let rise until double.

Bake at 375 degrees F for 10 minutes until golden brown.

Immediately brush top with melted butter and lightly press buttered
side in
cinnamon-sugar mixture (1 cup sugar to 1 tablespoon cinnamon). Or roll
in
powdered sugar or dip top side in favorite glaze.

Makes 3 1/2 to 4 dozen doughnuts.
