Subject: Carrot Fritters

5-6 medium-sized carrots,finely chopped or grated(not puréed)
2 eggs
1/2 teaspoon salt
1 tablespoon sugar
1/8 teaspoon cumin(optional)
1/4 cup Unbleached All-Purpose Flour
4 tablespoons(1/2 stick)butter

Mix carrots,eggs,salt,sugar,cumin(if desired),and flour in a medium-size mixing bowl.Set aside.Melt enough of the butter in a medium-size skillet to just cover the bottom
of the pan.Drop the batter by tablespoons into the hot butter.Fry fritters for a couple of minutes on each side, or until they’re set and golden brown.Cool on absorbent paper.Makes about 20 fritters.
