My son is also 7 will be 8 in November and has been diagnosed with encompresis 1 year ago. I give him Fiber Sure in everything he drinks and make him "sit" 2 times a day and he still has accidents. I have given him a couple enemas as the nurse suggested. The nurse also said he needs to eat high fiber diet which is so hard. He only eats meats and cheeses which are very constipating. I try to give him a lot of fruit juice and smoothies , but we are still battling this. Dr. Phil had a segment on it the other day. It can take several months to correct this. Let me know how its going for you and just know you are not alone.
