There is a book called the "Garth Williams Collection" that is good. He was an illustrator that you may recognize if you ever get the book, but those are cute stories. Also, if you go to the library and look in specific subject categories. We found "Tall Tales from Around the World" in the Fable section of the library and then found some easy to read Greek Myths. Then we found collections for girls and collections for boys. Etc...
When we go to the library I usually browse the shelves myself in picking stuff out for the boys. Granted they pick their stuff out too, but I go and find books that I know will interest them. There have been several times I've picked out books and I get the eye-roll but then they are so involved in that very book when they get home that they are in another world.
Also, maybe some series books? I am not sure what level your 1-2 grader is on. There are the author's Cynthia Rylant books, and then there are series books like "Pee Wee Scouts" and the Berenstain Bear Chapter books. But I have found that looking for the books that have lots of stories in them needs some 'hunt work' but usually once you learn how to find them, then it's easier to discover them.
