Baroque - This is difficult to choose just 1 great player but what I have noticed is the legendary big names (Segovia, Bream, Williams) all played Bach and other baroque competently, but not enough to make a huge impression on me. I think modern players such as Manuel Barrueco and David Russell, Paul Galbraith have excelled in this kind of music, and not only that but pushed it's playing level way past the older generation.

Classical (Sor, Guiliani, ect.) - Of the legendary players of the past, I'd say Julian Bream was remarkable in this type of music. He somehow had the right feel, timing to make this kind of music come alive. I'd say even more than his interpretations of Bach (which I was never fond of).

Spanish - Hands down Pepe Romero, remember also that Pepe first began as a flamenco specialist who slowly began to play the "classical guitar" repetoire his father and brothers played as years went on. But when he plays Albeniz or Tarrega, you can't help but hear the flamenco sensibility that other players usually don't bring out.
