Subject: Bolting problem

I have a 15 year old Tennessee Walker gelding. He is the sweetest horse and has terrific ground manners, the problem comes in when we ride. I lounge him everytime before we ride. We will be fine in an arena and he responds extremely well to what I ask him to do. As soon as we go outside on a trail, he loses his concentration and doesn't listen. We will be walking on a trail then all of a sudden he will turn around and head back the other way. I will correct him and get him turned around again, much to his dislike, but he will try it again and again and he will begin to walk faster. Also, if I ask him to go somewhere he hasn't been before he will dance around and move his hips away from the direction I want to go. My question is how do we get to the point where I am not constantly worried about him turning and bolting which could throw me off one of these times? Any help from anyone would be extremely helpful. Thank you!!
