I agree that we cannot understand God. I think that is the only thing I DO understand is that I DON'T understand.
I suppose that is what irks me so much about religion as opposed to spirituality. I never understood how a group of people could stand up and arrogantly announce that they understand God and the requirements for "salvation". Not to mention they all disagree with each other but each one is sure that their God is the only "real" God and everyone else's religion/spirituality is evil. I once asked a friend who was a fundamentalist Christian how she could really be certain that she knew the truth and everyone else was deluded. She answered, "Well, we just know..God has revealed Himself to us". I answered that people of other faiths feel that God has revealed himself to THEM. She responded that they were just wrong.
Maybe I think too much, but if I feel that God is speaking to me and someone says that they feel God told them the exact opposite, I can't say that my experience is somehow superior to theirs.
Sometimes I wish I had that kind of certainty...there is a security to it of sorts. Being a seeker is much harder, but it's the only truth I know.
