Oh Yum! One of my favs. I lay a few strips of bacon across the top & bake in the oven til done. I usually cover with foil after the bacon crisps & this helps keep the pork from becoming to dry.

Slice into medallions, brown in a skillet. Place in your crockpot with about 1/2 lb mushrooms, sliced & a can of mushroom soup. Don't add any water. Cook about 6 hrs. on low. Remove the pork & stir in 1/2 c. sour cream. Serve with rice or noodles.

Pork & Potato Bake.
Preheat oven to 350. Spray a cassarole with pam. Slice loin into medallions. Sprinkle with pepper.
Brown medallions in a skillet sprayed with Pam.
Place a layer of peeled, thinly sliced whole potatos in the dish. Cover with a thin layer of sliced onions, then add more potatos. Lay the medallions on top. Cover with foil & bake 45 min. to 1 hr. or until potatos are tender & pork is done.

For those that don't have pork loin on hand these recipes are also great with pork chops.

I love cooking mine in the slow cooker. I rub it down with some garlic powder, onion powder, a small amount of brown sugar and cinammon. Put it in the slow cooker with NO water on low for about 5 to 6 hours. Turns out great!
