Hi Jennifer,
For me I find it most helpful because it is more specific than Piaget in my opinion - the stages are more immediate and less global - so I tend to favor Erikson over Piaget. Freud is a little to out there for me, and behaviorism is too devoid of emotion (and enduring cancer treatment is laden with emotions!). I think I favor Erikson both because it is practical and makes sense to me, and also because it is easiest to observe these stages as they occur in children and families. When I deal with the big things, like limb amputations, relapses, terminal diagnoses, and death, Erikson's theory gives me information both about how the child might interpret that experience given their developmental level, and information about where to aim my interventions to help ensure that they continue developing when that experience has concluded. Great question though - I am still in the process of exploring myself, I just haven't found anyone to dethrone Erikson yet!
