In the American South, it is sometimes a point of pride to not adopt the more formal, mainstream diction. It shows that the powerful and wealthy haven't lost the common touch, and are still just trustworthy "good old boys" at heart. Mal would probably go out of his way to not sound like a member of the Alliance.

I gotta admit, I like Jayne. He's so transparently blustery, superstitious, nakedly greedy, and fundamentally indifferent. His ethics are those of a boy who grew up neglected in dingy alleys or on dusty infertile farms. He's ashamed and confused when a man takes a bullet for him, but he offers up his beloved gun in exchange for Mal's "wife." And it's no wonder that he takes every opportunity to needle the well-bred, (formerly) wealthy, educated Simon.

But I especially like Mal. He took a stand, and fought for his right to not live under the yoke of a faceless uncaring bureaucracy. He follows his own conscience, and lives up to his own (rather elastic) code of ethics. He's no Captain Kirk or Picard. His only mission is survival. He's just a man trying to live his own life on his own terms, on the ship he loves.
