I have a 1964 35' CC Skiff / Corinthian Lapstreak. The original decks were basically marine plywood. So you can replace them with marine plywood. ** BTW - I don't think they even make a mahogany plywood that thick anymore. They do make mahogany plywood(marine), but it is standard marine plywood with a thin Mahogany vanier.
The original plywood decks were covered with canvas and then painted. ** The canvas decks were very prone to leaks (read rotten deck plywood) and difficult to maintain.
You could cover your new plywood decks with canvas and paint if you wanted to be "original". But expect to do this recovering every 4 years or so if the boat is left docked in the weather.
A better deck is to go with an epoxy/fiberglass deck over the plywood. Here's how I am doing mine after I replaced the plywood decking that needed replacing. (1) get all the old canvas, paint and glue removed from the old decking. Method (Heat gun, paint remover, scrapper - dirty, nasty job) (2) sand ply deck with 80 grit to fresh wood (not too deep!) You want fresh/clean ply for epoxy to bond too - very important (3) brush on or roll on a coat of Smith's clear penetrating epoxy (CPES) *this will preserve the deck, prevent rot, and provide a strong bonding agent from coats of epoxy to come. (4) put down one layer of 4oz to 8 oz (I used 5oz dynel fabric) dynel or fiberglass cloth. Then roll on/squeege on a layer of epoxy on top of the cloth. Now, if you want a look like the original canvas, you could use a glass cloth that has the weave weight like the original canvas and then stop applying the coats of epoxy resin/hardner until you get the desired canvas like look (the underlying cloth weave showing through), This also has the added benefit of giving you a non-skid deck. Just keep rolling/squeeging on layers of the epoxy resin/hardener until you get the desired effect that you are looking for. Then paint with your desired paint. I used a 2 part polyurethane paint, Awlgrip or any of the other 2 part polys. Or you could use one of the 1 part polys. But the 2 parts will last a lot longer. And, this decking will look great and last a lot longer than you or the rest of the boat!! Oh, and don't epoxy to hull-to-deck joints or the cabin to deck joints as you will need to calk/seal these joints with caulk/bedding compount and 1/4 round strips to prevent leaking there. As these joints flex and epoxy/glass would crack/fracture here -- so use caulk/bedding compound & 1/4 round.
