Due to some problems in getting beef here (health scares etc - I usually get beef direct from farmers or from a reliable butcher), on occasion I have used soya and was quite surprised at how mince-like it can be, I honestly couldn't tell the difference. In terms of digesting beef though, my stomach is probably beef-atuned, I usually eat at least 2 beef meals per week and believe my digestion is better for it:) (it's a good excuse anyway.
