The only thing that could happen would be clear elastic ligatures taking up colour from strong coloured foods and these will be replaced when your archwires are changed or when you ask. Be bold. Experiment with colours and express your personality. I'm wearing conservative dark blue with metal brackets and like the way they look. I tried gold but it's boring.
