Say you were planning on making dinner . . .oh, let's say Tortellini. Now, you had a left over jar of sauce in the refrig you were going to use and when you opened the top . . . on the inside of the lid . . mold was growing . . but there was no mold in the actual sauce. I just boiled the heck out of it and added copious amounts of wine to it, not to mention drink copious amounts of wine WITH it, you should be okay. As long as you can't see anything wrong with the sauce in the jar, it's perfectly fine!! That goes for anything.. like meat.. if there is a discolored or unusual smelling bit.. just cut it off, and serve the rest to your family!!
