I'd suggest starting with:

* The Mike Stackpole X-wing novels (OUTSTANDING!) New characters, starring Wedge, but they perfectly capture the sense of adventure from the movies.
* Tim Zahn's novels (Heir to the Empire, Dark Force Rising, The Last Command and the Hand of Thrawn duology)
* The Han Solo Trilogy by Brian Daley (Han Solo at Stars' End, Han Solo's Revenge, Han Solo and the Lost Legacy -- they have a very different feel, set in a different part of space (the Corporate Sector) but you can't beat the adventures of Han and Chewie!)
* A.C. Crispin's Han Solo novels are pretty good.

Fit the rest into your schedule as time allows.
