Subject: Making Tender Quick

I know there have been talks about tender quick in the past & i found this along the way. So if it helps ,thats great. I found it on Smokey Joe's site if interested

To approximate Morton Tender Quick

3 lbs. non iodized salt
1 oz of potassium nitrate

-- mix this thoroughly and then mix in:

1 lb. sugar for corned beef


8 lbs salt
2 lbs sugar
2 oz potassium nitrate
