Right, Stu. We've chased each other around the continent long enough, great meeting you too.

The salmon recipe is a complicated one, long kept secret by generations of Canadians. For you, because you were so helpful to so many last weekend, I will share it.

Take a piece of Atlantic Salmon (that's the secret), put it in a ziploc, add 4 or 5 oz of pure Canadian (that's the other secret) maple syrup and keep it in the frig for 24 hours. Paul thought it would benefit from a bit of ginger with the syrup. I'm gonna try that next time.

Smoke it skin side down till the meat just begins to flake with a fork, about an hour, and enjoy.

For those of you who missed Stu's Klondike bean recipe on this forum some time ago, they are truly amazing!
