Subject: Paris Cookoff question

Scotty, I just recieved my entry form for the June 7th Canadian Pork Barbecuing Championship in Paris.
I was going over the 'Rules and Regulations' portion and I see that "teams will be required to help carve and SERVE barbecued pigs".

I understand that delivering the pig to the serve area helps them out but why serve the meat?
That is the time when all the teams will be tearing down prior to the awards get-together.

Now is this something that they are 'hoping for' or is this a carved in stone rule that all teams are to be expected to do?
