Actually that butt you have in the freezer will be more forgiving than most other things you will cook...
Low and slow and purdy hard to frigg up a butt......
give it a try and see.....
Give it a nice rub the night before and squirt er down with apple juice every once and a while during the cook......make sure the bark is "set up" before the applejuice so`s you don`t rinse off the rub......
