Reg: Glad to hear that your familiar with the advanages of brining! I forgot to mention that it also produces a very nice moist meat. In answer to your question, I've found that Morton Tender Quick is generally found in stores which may cater to those who probably will cure meat - farmers, ranchers, those who generally don't live in the central city!
While I don't live in the country or the suburbs, I am lucky enough to make frequent trips away from Central City and can stop and pick up some from time to time. If you can't find any don't worry, as you know brining works just fine without it.
