G'day from OZ. Thanks to the guys who took time out to reply to my email regarding "Q". Here in OZ Barbecue really means outdoor grilling ,good, but totally different to what is refered to as "Q" in Canada/US, I am still experimenting with my cooking and am in the process of converting an LPG cylinder to a smoker/cooker, I have been using a Weber kettle so far and getting pretty good results. Living in the sub-tropics, just north of Brisbane, SE. Queensland traditional wood is hard to come by, buying hickory at a "Q" store can be very expensive, I use a timber called Redgum, very hard but gives a good flavour to meat and a srong dark colour. I am a retired butcher so have no problems buying the cuts of meat I want, except for the price, bit dearer than Canada ,I think!so far I've cooked Brisket,Pork Butt, chicken, and one of my favourorits lamb flaps(breast of lamb)unusual maybe, but, to paraphrase the KFC guru, finger licken good, I would be interested in hearing how you guys"Q"in Canada,wood used etc. Bye for now Tom.
