Reg, Sounds like a super brine, you should get some good flavour from that.

A super tip I picked up from the one and only Roger "mop" Mahon is to gut down on the water a bit and use a bag of ice to weight the bird down and keep it submerged in the brine. This eliminates the need to take up space in the fridge, although you may need to replenish the ice.
