I did 4 bone in hams and 1 boneless leg for Christmas. Brined for 9 days and smoked in Bertha on the 24th. I could have used more Tenderquick to get more salt flavour, but other than the fact that I slightly over cooked the boneless one, they turned out all right. Did 6 turkeys, 1 chicken, 2 briskets, 1 butt and 2 small beef roasts at the same time. Should keep a guy going for a while. LOL
