If i read you correct, there is a cut above AAA, which is AAA/AAA, or Triple A- Triple A. Would that be how i would order it from the butcher? And if so Peter, will he or she know what i'm talking about & to boot, will they carry it. I buy for a store called Pusateri which carries USA prime, but big $$$'s, so if i can find AAA/AAA i would be better off.
