Here is something to get you pumped

Paul Kirk teaches a highly organized class on cooking authentic American barbecue. Students themselves mix the rubs, manage the fire, and cook the barbecue. The study and participation are intense, and the class lasts the entire day, from 7:00 am to 7:00 pm. Students who have taken the course agree that the class saved them many years of trial-and-error and experimentation.
The class is designed for barbecue enthusiasts and competitors. Paul Kirk will cover the preparation and cooking of beef brisket, pork shoulder, pork ribs, chicken and sausage. He will cover the barbecue philosophy of smoking, barbecuing and grilling. He will demonstrate meat selection and trimming, as well as temperature control. This knowledge will enable students to cook any type of meat, fish and vegetable.
Paul will also explain the details of designing rubs and sauces, fire control, the effect of different types of wood and charcoal on the appearance, taste and texture, and many other topics.
Students will be assigned to two-person teams (which will be assigned by Paul Kirk). Each team will learn how to develop its own recipe for rubs, mops, sauces, how to prepare and tend the fire, and all other phases of barbecue. Each team will learn the art of slicing and arranging turn-in boxes and how judges award scores. The teams will compete for the best scores in each of the four major categories: chicken, pork ribs, pork shoulder/butt, beef brisket and plus one whole hog.
