Mop, your advice has been a really great help. My gut tells me to cook the first load far enough in advance to chop, cool and pack for reheating the day of, just to be safe. I don't want a bunch of angry bikers on my hands. I can manage the whole load in 2 cooks, I'm sure.

I've got a big shoulder in now, about 20 lb, with a couple of slices in a "Tasso" rub. It was given to me a while ago and I just tried it on wings last week. The kids fought over them. REALLY hot. I'l let you know how that turns out and give you the recipe. (if it's worth eating)LOL

Many thanks again for your patience and your help. We all MUST meet to trade lies and eat Q this fall.
