hiya Ron, not a stupid question at all. i'm doing a trial run this weekend at a higher temp than normal and need to see how the big smoker will hold temps in cooler weather. as most of you know the cooker was only finished in late spring and i don't really have a handle on how things will work in cooler weather. there is a possibility that i may need it for a large cook later in November and i don't want any surprises. i will also be adding as much steel as i have handy on the racks to try to draw as much energy out of the fire as possible to see what the reaction will be.
around here there is no problem cooking extras and i don't charge except for for the cost of the product, its a learning experience.
