Subject: It's a beautiful day in the neighbourhood

It's 8 sunny degrees this morning going up to 12 this afternoon and I've got a 4.5 pound butt since 8 o'clock in the WSM (bone in for the first time, Mop). The 2 hour per pound rule doesn't seem to apply to me for some reason. It always takes me 3 to 4 hours more than prescribed. I used Qfan's Dizzy Dust coarse rub and will make a mop with it's finer version as described in Smoke and Spice and try their Golden Mustard sauce also later and see what gives. Hopefully the meat'll be ready by suppertime. LOL

Qfan, I don't know what to say except that 2 years ago I never even tasted a single bite of smoked meat. I have still a lot to learn (the more I learn, the more I realize how much I don't know) but I received a fine education from the members of this board to whom I am very grateful. No matter how silly my questions, there is always someone patient enough to provide advise, guidance, recipes and encouragement. If it weren't for the fine folks here, I'd still be staring at my smoker without a clue like a monkey in front of a computer or worse, it'd be tossed in the dump by now out of frustration. Thanks also for the membership card, I feel like framing it.
