Yeah, I did make it up on Friday. Substituted sage for the fennel, otherwise followed what you'd said. The pork should have been partially frozen or something because the bigger ribbons of fat just stayed intact or wrapped around the blade of the processor, so I had to pick thru it for those. Otherwise I think it turned out okay. I put it out onto plastic wrap in a rough log shape, rolled it up, then spun the ends in until it took the tube shape, then froze.
Any reheating suggestions? Would you boil it in the wrap and then smoke for a bit, smoke the entire log and cut off pieces as necessary (if so, smoke it at what temp and take it what temp?) , or simply just thaw the log til sliceable and then fry up individual slices?
Ideas? Suggestions?
