Good morning Barry. I think your times are about right, the only thing I would do is try to run at 275 to 300 F. You would be surprised at what the extra 25 deg's will do. I agree with the not mopping the skin, it won't penetrate it anyways. When you turn it however you may want to mop the inside to prevent it from drying out.
I may drop around on Sat to see how you are doing and take some pics for you.
