Peter i guess your right, but if they are paying who cares. i have never been one to be shy when it comes to doing things lol. are you going to be serving in a buffet line ?

you can get those aluminum steam trays that come with wire racks for all your hot and cold stuff. you will probably need about 10 sets, i think they are about $12 or so, then just keep filling them from single trays reheating on your cooker. best buy on those are at the dollar store, 99 cents for the large ones. in the past i have used a thickened pork stock to keep the meat moist in the pans.
