If you have leftover coriander (cilantro) here's what you could do with it:

Dice 3 tomatoes
Dice one medium onion
Seed and dice 2 or 3 jalapeno peppers
Mince 2 or 3 cloves of garlic
Chop the rest of your coriander (cilantro)
Mix all ingredients with 1 or 2 tbs of olive oil and the juice of 1 or 1 1/2 lime (to taste) lots of salt and voilą!

You now have a dip for your nacho chips. If you put 3 to 4 tbs of the stuff with chopped avocado, you now have a guacamole. If you put 3 to 4 tbs of the stuff with a small brick of cream cheese that you melt in a heavy cast iron pan you have chile con queso. Good luck!
