I really enjoy cooking poultry on my smoker. Has anyone found a way to get the skin crisp and not get rubbery? I was wondering if perhaps cooking the poultry directly on the coals at the beginning of the smoking or near the end might help the skin become crisper. Any suggestions? I thought I might do some experimenting.
