Subject: water smoker

hi all.
I recently purchased my first water smoker and would like some tips please. I did some ribs the other day but found it was not maintaining the right temperture. I had to finish rendering them in the oven. The gauge only says cool, ideal and hot. But I was told by the company that "ideal" was about 230. So any suggestions.....the amount of charcoal, wood, when to add the meat, how often to add coals or wood?
Help.
