Hi Rob: Welcome to the CBSA forum.
I have a Brinkmann Southfork and wouldn't ever think of using just wood, as you said to much smoke.
You can use just wood in very large smokers with good results, but even then I think a lot of the guy's preburn the wood to turn it into coals, which you could also do if you want less smoke and don't want to buy charcoal.
