morning Bigj, the last prime rib i did was rubbed with salt, pepper and garlic granuals only. cooked at 225-250 degrees and they were done in 6 hrs to med rare 140 degrees. if you get it done ahead of time they do hold their temp very well, just back off the cooker temp to around 180 or so and hold. hope it turns out to be a good day for you. also hope to see you in Paris.........reg
